Drum roll please!
The mystery side dish on yesterday’s plate was…OKRA! I do NOT want to hear one, single “yuk”. This is not just any ole okra. This was spiced and stir fried okra and it is GOOD. Hass has decided after eating dern near the entire plate, he likes it. He wants this to be his new snack. A perfect snack it is!
Okra is one of the newest super foods on the list. It has some really amazing health benefits including assisting in the prevention of diabetes, helping with kidney disease, supporting colon health and promoting healthy skin to name a few. So see. This is not yuk! This is a very powerful food and you will be amazed how good this is when stir fried with all sorts of yummy spices. It’s an excellent side dish that pairs well with just about any protein you can imagine. Especially the 40 Garlic Clove Chicken from yesterday.

Spiced Stir Fried Okra
Adapted from a recipe in Food & Wine Magazine
- 3/4 teaspoon smoked paprika
- 1/4 tsp. cumin
- 1/4 tsp. coriander
- 1/4 tsp. fennel seed
- 1/8 tsp. turmeric
- 1/8 tsp. cinnamon
- 2 tbsp. olive oil
- 1 pound of okra, halved lengthwise
- lemon juice from one lemon
- Lemon zest from one lemon
- Salt & pepper to taste
Heat oil in skillet. Add okra and all remaining ingredients except lemon juice and zest. Stir fry on high heat about 3 minutes, mixing all ingredients well, then lower heat and cook another 2-3 minutes until crisp tender. Serve with lemon juice and a sprinkle of lemon zest.
