I’m all about tradition.  I believe in the old school ways of doing most things. I think the proven, tried and true methods were better: Better built cars and appliances; sturdier homes; more emphasis on responsibility and accountability in mankind. People were genuinely nice and cared for their neighbor. Those ways worked for my grandparents. They worked for my parents. They work for me. Why change a good thing? Isn’t there a saying, “Don’t fix it if it ain’t broke?” Yeah. THAT. In my mind nothing was broken, so there was nothing to change, or “fix”.

That same philosophy applies to meals. As a kid my favorite breakfasts involved eggs. I didn’t really care what went with them, I just wanted the eggs. Eggs and grits, scrambled with cheese, sunny side up, mashed with Liver Pudding…it didn’t matter as long as there was an egg of some sort on my plate. I still cherish my morning egg.

Except. I have strayed from the beaten path. Pun intended. Eggs offer a world of pizzabilities! Yep. PIZZA-bilities. Eggs + Pizza = Breakfast heaven.

I know breakfast wasn’t broken. I know sometimes you shouldn’t change a good thing. But other times, you have to be a little traditionally, nontraditional.

Sunny Side Up Fresh Veggie Breakfast Pizza

Ingredients:

  • 1 loaf French Bread, halved then diagonally sliced
  • 1/2 cup melted Garlic Butter
  • 2 tbsp. Italian seasonings
  • 2 cups various vegetables, chopped – I used mushrooms, bell peppers, and tomatoes
  • 1 ball fresh mozzarella – sliced
  • 1 cup grated Parmesan
  • 4 eggs – Sunny side up (you can use scrambled if you prefer)
  • Salt & pepper to taste
  • Chopped scallions for garnish

Directions:

Heat oven to 400. In a skillet, saute vegetables with a little of the garlic butter, 1/4 of the Italian seasoning, salt and pepper until the vegetables are crisp tender. Brush remaining garlic butter over bread. Sprinkle with remainder of Italian Seasoning. Bake for about 3-5 minutes. Remove from oven and top with fresh Mozzarella slices, then vegetables, then top with Parmesan cheese. Return to oven for another 5-7 minutes or until cheese is golden brown. Top with sunny side up or scrambled eggs. Garnish with chopped scallions.
