Did ya’ll know I’ve written seven posts on how much I hate Mondays. SEVEN. That’s a whole lot of negativity. And you KNOW I’m the absolutely queen of positivity and optimism. My cup not only overflows, but could usually cause a Tsunami! That means there is something terribly wrong with this repeated horrid Monday picture. Maybe it’s all in my head.
Unfortunately, this Monday has been no different. I woke up a “tad” late, after hitting the snooze button repeatedly, hoping it was just a bad dream. I made a huge crockpot full of veggie and ham soup to be ready for dinner tonight, grabbed the cheesecake for my office, my breakfast and lunch bag, and out the door I went.
It was pouring rain, so I grabbed as much as I could in hopes to only make one trip. I ran to the truck, pulled on the handle and…it was LOCKED! My truck is never locked! Yesterday, sweet Hass had taken it to fill up the gas tank for me and locked it upon return. How sweet was that? As I stood there in the torrential downpour tugging on all four doors, I wanted to kill him.
I ran back to the garage, a drowned rat. I put everything down, found my keys and back out into the ocean I went. I unlocked the truck, and ran back to the garage to get my things. Then back to the truck. By now, it appeared as if I had taken an early morning swim. Fully clothed. Go look up “hot mess” in Websters. Yep, there’s my picture!
It took the entire hour drive to work for me to dry out. Ugh. But I was dry and safe in the confines of my office. I finally sat down at my desk to have breakfast thinking the worst of Monday had surely passed when lo and behold, I promptly proceeded to squirt ketchup directly into my eye. How does that even happen? I wear glasses people!
In thinking about this in great detail, I have decided that although I have tried to work on my relationship with Monday, it just isn’t working out between us. I think we should go our separate ways. I want to break-up. Moving forward, on Mondays you will find me in my PJs, hiding under my covers. Wonder what my boss will think about that…
German Chocolate Pancakes with Honey Bourbon Syrup
- 3/4 cup Buttermilk
- 1 cup all-purpose flour
- 2 tablespoons white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons butter, melted
- 1/8 cup Chocolate syrup + 1 cup
- 1 mini bottle GOOD bourbon, I used Angel’s Envy
- 1/4 cup honey
- 1 cup shredded coconut
- 1/2 cup chopped Pecans
- cooking spray, I use Coconut Oil spray
Combine flour, sugar, baking powder, salt and baking soda in a large mixing bowl. Whisk egg and butter into buttermilk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Stir in 1/8 cup chocolate syrup. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet. These are really thick and you will need to spread the batter into the size you want your pancakes. Cook until edges of pancakes appear done. Flip with a spatula, and cook until browned on the other side.
Bourbon Honey Syrup:
Whisk bourbon, honey and remaining cup of chocolate syrup. Drizzle over warm pancakes.
Top pancakes with chopped pecans and shredded coconut.
