As indicated by my 20 minute increase in drive time to work, several thousand brake lights if there was one, and tons of kids standing along the side of the road it’s either a Luke Bryan sighting, or it’s time to go Back To School y’all! I’m sure some are celebrating while others are kicking and screaming. I was definitely the celebrating type! Me and school got along quite nicely 🙂

I was a kid of the 80s. Remember THAT era? Tie dye shirts, swatch watches (I so want mine back!) parachute pants, neons, florescents, HUGE HAIR and all things “jelly”. It was the decade of Aquanet.

This isn’t me. But this could have been me. That hair though.

Back to school bring back good memories, especially of mama making after school snacks. Everyone wanted to ride the bus home with me to get to the snacks! MAN we had outrageous appetites back then! Not much has changed. Well, except the hair.

7 Layer Mediterranean Snack

  • 1 8 oz. container of your favorite hummus, homemade or store bought
  • 1 container cherry tomatoes
  • 1/4 cup balsamic vinegar
  • 2 cucumbers, one diced, one sliced
  • 1 jar roasted red peppers, cut into strips
  • 1/2 cup Kalamata olives, drained
  • 1/2 cup banana peppers, rings
  • 1 block feta
  • Good Olive Oil
  • pita wedges

Directions

Cut cherry tomatoes in half. Place on a baking sheet and drizzle with balsamic vinegar. Salt & pepper to taste. Roast at 425 for about 20 minutes. Remove from sheet and set aside.

Place hummus in a bowl. Top with remaining ingredients (except pita wedges and sliced cucumber) in layers ending with balsamic tomatoes and Feta. Drizzle with olive oil and serve with pita wedges and sliced cucumber.
