Yesterday’s mention of the 80’s really brought back some great memories. However, I realized I couldn’t merely mention the 80’s. This topic is discussion worthy y’all.

It was the decade of “Chill Pills” and Aquanet, and going right along with that, it was the decade of the “like most totally awesome” HAIR BANDS OF ALL TIME! Do you remember these guys?

Man those guys rocked! They just don’t make bands or music like this anymore. They defined the 80s. Who were your favorites? What were your favorite songs?  Front Porch minds want to know!IMG_20150503_203553

These “righteous” flatbreads are homemade and not “grody to the max” like frozen pizzas. They’re totally “gnarly”, “won’t barf you out” and they make a great after school snack! Add a nice Greek salad and you have a fantastic, light summer dinner. Add a glass of wine and you have paradise!

Easy Flatbread Pizzas

  • 1 package flatbread crusts
  • 1 jar pizza sauce, or homemade
  • 1 ball fresh Mozzarella Cheese
  • 1/2 cup Grated Parmesan cheese
  • Good Olive Oil
  • Toppings of your choice:
    • Pepperoni
    • Olives
    • Mushrooms
    • Prosciutto
    • Spinach
    • Sausage
    • Pineapple
    • Banana Peppers
    • Ham
    • Canadian Bacon
    • Fresh Sliced Tomatoes
    • Fresh Herbs such as Basil
    • Pepperoncini
    • Goat Cheese
    • Figs
    • Honey

Directions

Flatbread pizzas are very simple with the key being less is more. Pick no more than three toppings for your pizza. You can always use different toppings on each half.

Drizzle olive oil over the flatbread. Spread very lightly with sauce. Add cheese, then very light toppings. Sprinkle with Parmesan. You do not want to overload flat breads as you will loose the crisp crust. Lightly topped is key. Bake at 400 degrees for about 5-7 minutes; just long enough for the cheese to melt and the bottom to crisp without burning.

* A pizza stone is great to use with flatbreads. The great thing about these is they only take a few minutes in the oven! *
