Breakfast really is the most important meal of the day. Argue with me if you will, but you won’t change my mind. Maybe I can change yours. Even if you’re not a breakfast person, these breakfast wraps will change your life. I promise. Guaranteed.
I have a very special group of friends. We share every aspect of our lives and hold each other accountable for many things including our health, fitness and nutrition goals. In doing so, every morning we post our menus for the day. Many moons ago, one of my besties Kim posted her breakfast as a “crack wrap”. Huh? Even at 6:30 am THAT got my attention.
“Kim. What exactly is a crack wrap?” I asked. “It’s only the most delicious breakfast wrap in the world!” said Kim. Well then. That about summed it up. Kim went on to describe her wrap, and I would be lying if I said this was not as addictive as crack. Although I am not a druggie by any stretch of the imagination, other than a practicing wino and taking an occasional Sudafed, this is how I would imagine a serious addiction. I am now a crack wrap addict.
This is truly the most delicious, nutritious, easy breakfast I think I have ever made short of opening a container of yogurt. You can easily make these in bulk, wrap in plastic wrap, and you have quick, to-go breakfasts for the entire week. How awesome is that? Thank Kim… THIS is what friends are for!
Kim’s Crack Wraps
6-8 wraps of your choice – I love Joseph’s Lavash and Xtreme Wraps in Spinach and Sun-dried Tomato
8 Tbsp. Hummus of your choice – My favorites are the Roasted Red Pepper and White Bean varieties (THIS is the secret ingredient. Do not omit the hummus under any circumstance unless you have a fatal hummus allergy. Do. Not. Omit.)
1/2 small container of eggbeaters, scrambled – You may use whole eggs in you prefer
6-8 slices of cheese – My favorite on these is Pepper Jack
Salsa or Hot Sauce for dipping
Optional* – you may also add any veggies you like such as turkey bacon, turkey sausage, diced ham, mushrooms, spinach, onions, olives, etc. to make this your best breakfast wrap ever! Sometimes I add spinach as shown above for extra vitamins, but honestly, Kim created the perfect wrap.
Directions:
Lay wraps on a flat surface. Spread with 1 tbsp (or more 😉 ) hummus. Top with scrambled egg beaters, cheese and other toppings as desired. Roll your wrap and eat! Dip in hot sauce or salsa if you desire. It does not get any easier, or any more divine y’all! SERIOUSLY. YUM.
Here are a few additional quick breakfast ideas!
Breakfast Bruschetta & Smoked Sausage
Toast a few slices of bread. Top with cheese, scrambled eggs, diced tomato and diced onion. Place under the broiler until cheese has melted, and serve with smoked sausage.
Continental Breakfast
Prepare a large platter of scrambled eggs with chives. Add a tray of cinnamon pecan rolls. Assemble fruit and yogurt parfaits alternating fruit and yogurt of your choice and topping with additional fruit and granola. Add whip cream and sprinkle with cinnamon if desired.
