It could be a cute nickname. But it isn’t mine. Mine was Gigglebox. Ok. Yeah. Enough about that.
This Bubbles is a pretty awesome breakfast casserole. Doesn’t it look like bubbles? Although I’m not a big fan of breakfast casseroles, this one, I actually like. Like make it again like. It’s not to the love affair point as I have with this breakfast, but it’s a smoldering romance at the least. I would place it in the club with these.
Most breakfast casseroles I have tried taste like a big pile of mush. And look pretty much the same. This one is really pretty. And really good. And not at all….mushy. We like non-mush. You can make this a day ahead so it’s great for New Years Day or any morning you want a quick, hearty breakfast. That’s not mushy.
Bubbles Breakfast Casserole
Ingredients:
- 7 eggs
- 1/2 cup half & half
- 2 cans refrigerated croissants, sliced into one inch pieces, then halves
- 1/4 cup green onion, chopped
- 1/4 cup sundried tomatoes
- 1 package turkey sausage links cut into small pieces
- 1 bag grated Mexican cheese blend
- 1 tsp. Thyme or Rosemary
- salt & pepper to taste
Directions:
Lightly beat eggs in a large mixing bowl and add half & half. Add salt, pepper and all herbs. Mix well. Add dough pieces and allow to soak in egg mixture for about 10 minutes. Add remaining ingredients and mix well. Pour into a greased 9×13 or similar baking dish and bake at 350 for about 30 minutes or until the center is set. Serve with fresh fruits or a bowl of piping hot grits!
