Here goes.

Some days I have no desire to cook. I just don’t want to follow the plan. Told ya this would be shocking. Are you still breathing? It’s almost as surprising for me to type, as I’m sure it is for you to hear it, but it’s true. Some days nothing sounds good. Not a single thing.

I had one of those nights last week. I was tired from a very long day, I wasn’t that hungry and nothing sounded appealing. I considered take out multiple times on the way home, but nothing I could think of for take-out sounded any better. I figured I’d just scrounge some kind of easy to fix meal like soup and sandwiches, or flat bread pizzas when I made it home.

I went to the kitchen, still having no desire to be in there. I started to look around the fridge and the pantry. Well, gnocchi is always quick and I had some roasted chicken. There was some spinach and wait…what is this little treasure? There, hiding in my cheese drawer was a little round container of Bleu Brie. Hmmmm….now I was feeling a little excited.

I began to think of sauces I could create for the gnocchi. I found some turkey bacon and it was ON! I made a quick tray of cheese, crackers, olives, fruit and roasted veggies, to serve with a gorgeous Santa Margherita Pinot Grigio, and then a super quick cream sauce with the Bleu Cheese Brie. I put the last plate on the table when my Hass walked in.

Hass loves being married to such a great planner. Sometimes though, great things come from the most unplanned meals. Now remember…this is strictly between us. You pinky promised 🙂

Gnocchi with Bleu Cheese Brie, Spinach and Bacon

Ingredients:

  • 1 package gnocchi – serves 2 people
  • 1 container Bleu Cheese Brie – Plain Brie, Marscapone or even cream cheese will work
  • 1 cup cream
  • 5 slices cooked bacon or turkey bacon – chopped
  • 1 bag baby spinach
  • 3 tablespoons Smoky Bleu Cheese – Optional

Directions:

Place brie and cream in a small sauce pan. Stir over medium heat until brie has melted and incorporated with the cream. On your serving plate, place fresh spinach, and cooked gnocchi. Top with cream sauce, chopped bacon and additional Bleu Cheese. Now how easy and gorgeous was that!! Delicious doesn’t have to be complicated.
