OK, OK, I’ll tell you. It’s No Wait Wednesday! The day I’m going to give you a recipe that requires almost no wait from start… to table… to your belly. This dinner should take you less than 15 minutes from start to finish. I’m serious. Don’t you trust me? It’s like I Dream of Genie blinked in your dinner! That. Fast.

Springtime Lemony Pasta with Shrimp and Fresh Asparagus
Ingredients:
- 1 pound shrimp, peeled
- 1 bunch fresh asparagus, trimmed
- 1 package fresh pasta – The cook time for fresh pasta is crazy fast
- 1 cup white wine – If you prefer not to use wine, use 1 cup reserved cooking liquid from your pasta
- 1 stick butter
- Juice from 3 lemons
- Zest from three lemons
- 3 tbsp. GOOD Olive Oil, Lemon flavored if you can find it
- Salt & pepper to taste
Directions:
Bring a pot of water to a boil and prepare pasta; cook time should be about 5 minutes. Place butter in a large skillet. Add lemon juice and olive oil and bring to a simmer. Add wine and allow to reduce about 5 minutes. Add asparagus and stir fry until crisp tender, about 3 minutes. Add shrimp and lemon zest and cook until shrimp just turns pink. Drain pasta and toss in skillet with shrimp, asparagus and sauce.
DONE!
This is really fabulous served with crusty bread and nice spring salad. And wine. It can be Wine Wednesday too! 😉
Note: If you happen to have a bottle of Limoncello on hand, substitute this for the wine. It adds an incredible amount of additional lemony favor!
