I knew it would happen. You knew it would happen. It happened.
While the meatballs were great for a fling, and I do so appreciate the value they bring to the table, it was inevitable I’d go back…to chicken. I mean come on! How can I stay away? Just look at it ^. Could you resist that crisp juiciness? Especially on those Bacon and Applewood Smoked Cheddar waffles? Meatballs + waffles = just not the same thing. That would just be too weird.
So back to chicken I ran. It’s a glorious thing. I missed it so.
I was after a hearty breakfast Saturday morning and really wanted waffles. But not your ordinary waffles. I wanted different waffles. Spectacular waffles! Out of this world waffles! And so it came to pass, I made waffles. Really, really good waffles filled with bacon and Applewood Smoked Cheddar.
Whaaat? You’ve never had a savory waffle? People people! Let’s think outside our culinary boxes. We can put all kinds of stuff in waffles! Waffles aren’t just for fruit anymore. Do you see that beautiful ring of crispy, melty cheese around the edges? You have to have this. You have to have this now.
Nothing seemed more fitting with these waffles than to take some chicken strips and make our super crunchy chicken (recipe here) to place comfortably right on top of these golden beauties. Add some fantastic, buttery maple syrup and that is one fine breakfast right there y’all. In fact, this would make an excellent brunch for Easter morning.
So now you see why I had to do it. I just had to make amends with chicken. Don’t get me wrong, when I’m feeling a little frisky, I still have meatballs number. But for now, the chicken and I are reunited.
…And it tastes so good!
Crispy Chicken with Bacon & Applewood Smoked Cheddar Waffles
Ingredients:
Waffles:
- 2 cups flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 tbsps sugar
- 3 eggs
- 2 cups buttermilk
- 2 tbsps melted butter
- 6 slices bacon, crumbled
- 1 cup Applewood Smoked cheddar cheese, grated
- 3 green onions, diced

Directions:
In a mixer, blend all ingredients except cheese, bacon and onion. After this has been mixed well, stir in remaining ingredients. Prepare waffle iron according to directions and make waffles in batches. Add chicken tenders and top with Maple Syrup.
