If I were to tell you I love food would you really be shocked? Of course not, unless you’ve lived on another planet for the past few years. I shout it from the rooftops! And this blog. So there’s no surprise there.
Yesterday was my birthday. Everyone kept asking me if I was celebrating the anniversary of my 29th birthday. Good Lord no! I have earned EVERY SINGLE SECOND of my 42 years and dang proud of it! I’ll shout THAT from the rooftops too! I kinda think I look pretty good for 42. 40s are the new 20s you know. Sweet boy doesn’t look too bad either. He’s kinda cute huh? I’ll keep him.
Especially since he knows how to do a food lover’s birthday right!
My day started kinda crazy, really like any other day. Except yesterday my crazy began by drop kicking my first gift down a flight of stairs and into the living room. That was followed by plowing into my garbage can as I backed out of the driveway with so much force, it flug into the neighbors yard. And THAT was followed by picking up said trash for the next 15 minutes.
BUT! It turned around :). I was given a free cake pop from Starbucks, which is like gold on a stick.
THEN, I was given this quite amazing strawberry cupcake by my co-workers.
Do you see the chocolate covered strawberry on top? Sigh.
After work I picked Hass up for dinner. We started at Mac McGees for appetizers and drinks. This. Was. YUM. You can see heaven shining down on this place right here. See?
We had these Bacon, Cheddar and Chive Tater Tots.
…and this Chicken 65 with Indian spices.
…and this great chocolate stout and Mac’s own Paddy Punch.
And this beautiful view of downtown Roswell.
If that wasn’t enough, gluttony set in and we were off to The Mill for dinner.
We had more drinks; mine was called a Tipsy Pig. It had BACON.
Then more appetizers of Deviled Eggs with Bacon (do we see a theme here yet?), Crab Fritters, Pimento Cheese Fritters and Smoked Trout Dip.

Now THAT is how you celebrate a food lover’s birthday y’all! FOUR desserts in one day. š My heart is happy.

CapreseĀ Chicken Bake with Pesto
Adapted from a Recipe by The Girl Who Ate Everything
Ingredients:
- 8 boneless, skinless thighs or 6 breasts
- 3 sliced tomatoes
- 1 sliced red onion
- 1 bunch fresh Basil
- 1 cupĀ shredded Mozzarella cheese
- 1 cupĀ grated Parmesan cheese
- 1 cupĀ Pesto, homemade or store bought
- 2 cups seasoned Panko
- 1 tbsp. minced garlic
- 3 tbsp. melted butter
- 3 tbsp. GOOD Balsamic vinegar
- Salt & pepper to taste
Directions:
Place chicken in a greased baking dish. Salt & pepper to taste. Cover with Pesto, tomatoes,Ā onion and garlic. Top with cheese and breadcrumbs. Sprinkle with fresh Basil. Drizzle with the Balsamic vinegar, then with melted butter. Bake at 375 for 30 minutes or until chicken is cooked throughout.
I sure had a yummy birthday.
