Happy “After the Fourth” y’all! What did you do? How did you celebrate? More importantly, what did you EAT? 🙂

Every time we visit the grand-kids in SC, it’s like a tornado hits life as we know it. The visits are never long enough, but we are always thankful for our peaceful, quiet home upon return. After eating out for those days, we are even more thankful to have home cooked meals.

So, on that note, I have to share a quite comical story. Imagine that! Me with a story? I KNOW. You’ll like this one. It involves a conversation with coleslaw.

Our story begins in a beautiful kitchen in the North Georgia Mountains…

Once upon a time, in a kitchen far, far away, there lived the food whisperer. I know it sounds crazy, but I’m telling you, this girl has complete conversations with food. It speaks to her.

One day she was in her kitchen getting ready to prepare her friend Deon’s Purple Carrot Slaw. The only problem, was she had no purple carrots, and no purple grapes. She looked and looked, but none were to be found. So, she did the same thing Deon did in his slaw story. She improvised! As she looked in her fridge, she came across some beautiful red strawberries, fresh bell peppers, and crunchy cucumbers. Not your typical slaw ingredients, but why not? If Deon can make a Purple Carrot Slaw, then she could make a Red & Green Strawberries and Pepper slaw right? And so she began. Her creation was complete and just in time for dinner!

But what? Who said that? Was there someone else in the room? Who is whispering, “Smoky Fish Sliders???” It was the slaw! The slaw proceeded to tell her how amazingly delicious it would be sitting piled high atop a gorgeous, crunchy fish slider. But it was already 8:00 PM!

UGH! She had to make fish sliders at 8PM?

There was no way around it. The slaw wanted the sliders. And the slaw gets…what the slaw wants. Sliders and slaw it was. At 9PM.

Thanks for a fantastic slaw recipe Deon! I didn’t have some of the ingredients you used for the vegetable and fruit blend, but I made your dressing to a tee and it was SLAMMIN’!!! Y’all need to go check out foodjam and the original recipe for Deon’s Purple Carrot Slaw.

Crunchy Fish Sliders with Strawberry Pepper Slaw

Ingredients for slaw:

  • 1/2 pound strawberries, sliced
  • 1 x fennel bulb, grated (remove the ends and save some of the strands for decoration)
  • 1 carrot, diced
  • 1 cup purple cabbage, grated
  • 2 bell peppers, diced
  • Juice and zest of 2 limes
  • 3/4 cup fat free yogurt
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 6 fillets of baked or fried fish of your choice
  • 1 package King’s Hawaiian Rolls

Directions:

Add all vegetables and fruit to bowl and blend. Create dressing by whisking yogurt, lime juice and zest, coriander and cumin. Mix the yogurt with the slaw mixture and combine thoroughly, taste it and check for seasoning, it should be a wonderful hint of lime balanced with the yogurt and spices.

For the sliders, use baked or fried fish fillets with King Hawaiian Rolls.
