Yes, the boy and I just returned from five glorious days in Clearwater, Florida. Granted it was half business/half pleasure, but I can deal with that.
You should be very pleased with yourself that I returned just because of you! Because I love you like that. Because my very favorite part of every day is spent sharing recipes with you. Like this recipe for Grilled Tuna with Pineapple Cilantro Salsa for example. It’s my favorite, and you are my favorite. So I came back just because of you. And well, because I need to pay the light bill 😉
Grilled Ahi Tuna Steaks with Pineapple Cilantro Salsa
Ingredients:
- 2 Sushi Grade Ahi Tuna Steaks
- 2 cups diced pineapple
- 1 bunch fresh Cilantro, roughly chopped
- 1 diced green onion
- 1 diced Jalapeno, seeds and membrane removed
- 1/2 tsp. minced garlic
- 2 tbsp. Olive Oil
- 1/4 cup Pineapple flavored Balsamic Vinegar
- Salt & pepper to taste
Directions:
Brush tuna steaks with Olive Oil. Season with salt & pepper to taste. Grill tuna steaks for no longer than 2-2 1/2 minutes on a very hot grill. You want the center to be rare.
Toss remaining ingredients and top steaks with the salsa. Enjoy!
