Sweet, sweet, sweet, sweet, sweet …..potatoes!! It really doesn’t get any better than this y’all! Sweet potatoes make amazing fries, they’re great topped with marshmallows and brown sugar and what Thanksgiving dinner would be complete without these in a casserole or pie? None in America. That is not my opinion…that is fact. Do you see how easily I can skew the line?
Did you know, however, that these gems can also be used in a breakfast casserole? I did not until one of my BFFFFFs Kimmie found a great recipe. Where she leads I follow, and I followed her straight to sweet potato breakfast bliss! It’s nutritional, delicious and super crazy easy y’all. This is the perfect casserole to bake on Sunday and section out for morning rush breakfasts. Hass loved it, I loved it, the kids will love it, you will love it, grandma will love it…not sure about Fido, but sweet potatoes are even great for pups too!

Sweet Potato Breakfast Bake
* As adapted from Eggbeaters Sweet Potato Casserole
Ingredients:
- 1 pound sweet potato, peeled, cut into 1/2-inch pieces
- 3 frozen Turkey Sausage or sausage patties, chopped
- 1 carton Egg Beaters or liquid eggs (can substitute 8 eggs if desired)
- 1 bunch baby spinach
- 1/2 cup sliced mushrooms
- 1 cup 1% low-fat cottage cheese or Ricotta cheese
- 1/2 cup milk
- 1/2 cup shredded Cheddar cheese, divided
- 1/4 cup pure maple syrup
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
Preheat oven to 350°F. Spray 13×9-inch glass baking dish with cooking spray; set aside. Place potato in microwave-safe bowl; cover. Microwave on HIGH 5 minutes or until tender, stirring once halfway. Place potato evenly in baking dish. Sprinkle sausage over potato. Next, layer spinach, then mushrooms. Combine Egg Beaters or egg, cottage cheese or Ricotta, milk, 1/4 cup Cheddar cheese, syrup, salt and pepper in large bowl. Pour Egg Beaters mixture over potato and sausage in baking dish. Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/4 cup Cheddar cheese; let stand until cheese melts.
