Why did the pineapple go out with a prune?
Because he couldn’t find a date!
Ha! Ha! Ha!
OK. So that was pretty corny…but this Pineapple Cheddar Casserole recipe is right on the money. Corn not included.
Southern Pineapple Cheddar Casserole
Ingredients:
- 2 large cans pineapple chunks, drained (reserve juice)
- 5 tbsp. flour
- 2 cups sharp cheddar cheese, grated
- 1 cup sugar
- 1/4 cup brown sugar
- 1 stick butter, melted
- 1 cup crushed crackers (Ritz is the traditional cracker of choice, but I used crushed Bleu cheese crackers)
Directions:
In a large bowl, add pineapple chunks, flour, cheese, both sugars and 1/4 cup reserved pineapple juice. Add Mix well. Pour mixture into a well greased casserole dish. Top with crackers, drizzle butter over crackers.
Bake for 30 minutes at 350 degrees or until golden brown.
This makes a great, easy side dish for holidays and pairs beautifully with baked ham.
