Smoked Salmon Deviled Eggs
- 12 boiled eggs; shelled, halved
- 1/4 cup Mayo
- 1 container Mascarpone cheese
- 3 tbsp. dill pickle juice
- 8 oz. Smoked Salmon
- 1 sprig Fresh Dill, diced
- Salt & pepper to taste
- Salmon Roe for garnish if desired
Boil eggs, peel and slice in half lengthwise. Place yolks in one bowl and whites on a platter. Mash yolks with a fork or potato masher. Add remaining ingredients to yolks and stir well. Fill egg white shells with mixture. Top with additional salmon, roe or Smoked Paprika.
