Imagine this.
It’s 4:30 on a Thursday afternoon. The phone rings. It’s one of your BFF-FFFFs whom you haven’t seen in eons and it just happens she is passing through town TONIGHT! You are thrilled beyond measure and anxiously ask where she would like to have dinner. She then tells you she’s been on the road a good bit lately and a home cooked meal sounds absolutely fabulous. Oh. And she’s bringing a co-worker. (Yes, this happens.)
Alrighty then. You have a few hours to plan a menu and hit the grocery store. It needs to be relaxed enough for a casual dinner with a friend, but impressive enough for guests. I’m not sure what the rest of the menu will look like, but I know we’re going to start with my version of Bang Bang Shrimp. Quick, easy, inexpensive…impressive.
FPG Bang Bang Shrimp
(Copycat version of Bonefish Grill)
- 1 pound of shrimp, shelled and deveined
- 1/2 cup good Mayo
- 1/4 cup Thai Sweet Chili Sauce
- a couple drops Sriracha
- 1 tbsp. honey
- 3/4 cups cornstarch
- Cilantro, Scallions, Parsely or Lemon wedges for garnish
- 1/3 cup Olive Oil
Directions:
Mix mayonnaise with Thai Sweet Chili Sauce, Sriracha and honey.
Dredge the shrimp in cornstarch. Saute’ the shrimp in Olive Oil until lightly brown. Drain on paper towel, put in a bowl and coat with the sauce. Or serve with sauce on the side.
Serve in a lettuce lined bowl, top with chopped scallions, Parsley or Cilantro and lemon wedges.

Holy Moly! I bet this would be good on some scallops too!!

Girl, I barely got the shrimp in the cups and snapped the photo before the boy was sucking them down! LOL! I think scallops would be an exceptional idea!
