I’m a very “snacky” person. Many times my snacks become my meal! Particularly when they’re really fresh and cheesy. Case in point, that Bruschetta up there.

Bruschetta: Thick slices of bread grilled, rubbed with garlic, drizzled with olive oil, often topped with tomatoes and herbs. Usually served as an appetizer.

This particular Bruschetta is topped with Pesto, Mozzarella and gorgeous vine-ripened, golden tomatoes. It’s light enough for a snack and hearty enough for an appetizer, so I’d wager this is a perfect Snack-i-tizer!

Pesto & Golden Tomato Bruschetta

  • 1 loaf of good bread cut into thick slices
  • 1 bulb roasted garlic
  • 1 cup Pesto
  • 6 thin sliced golden tomatoes
  • 2 cups Mozzarella, shredded or thin sliced
  • Fresh Basil leaves
  • Good Olive Oil

Directions:

Spread roasted garlic on bread slices, then lightly drizzle with olive oil. Top with Pesto, then with cheese. Add slices of tomato, and fresh Basil. Bake at 400 until cheese is melted and golden. Top with additional fresh Basil and another drizzle of olive oil.
