…you can’t deny the party in your mouth from a great Alfredo.

Pasta is the devil. Any kind. Any shape. Any flavor. It is the sole reason I have what appears to be a second person stuck to my tail end. I was walking down a mirrored hall and thought someone was following me. Um no. That would be the butt. True story y’all. Im sure bread had a very important role in that as well.

Moving along.

Spaghetti with a good Bolognese is my all time favorite. However, you can’t deny the party in your mouth from a great Alfredo. Especially one with lemon 😉

Chicken Penne with Lemon Alfredo

  • 2 chicken breasts, cooked & medium diced
  • 1 cup broccoli florets, steamed
  • 1/2 cup mushrooms, steamed
  • 4 cups penne pasta, cooked – RESERVING 1 CUP PASTA WATER
  • 1/4 cup butter
  • 2 cups heavy cream
  • 1 tbsp. garlic, minced
  • 1 cup Parmesan, grated
  • 1/2 cup Asiago cheese, grated
  • 1/2 cup Roman cheese, grated
  • zest & juice from 2 lemons
  • salt & pepper to taste

Directions

In a sauce pan melt butter over medium heat. Add cream and bring to a boil. Lower heat to medium and add garlic, lemon juice and lemon zest. Whisk in cheese. When cheeses have melted, remove from heat. If the sauce is too thick, whisk in pasta water a couple of tablespoons at a time until desired consistency is reached. Season with salt & pepper to taste, then toss with pasta. Top with chicken and steamed vegetables.
