Because lamb is such an amazing, versatile protein, I used the leftovers last night for these sandwiches.
I always get excited when I see this come out.

Hass broke out the old girl over the weekend and smoked this gorgeous leg of lamb.
I know right? It does NOT get any better than this. It had an amazing rub of olive oil, garlic, and fresh Rosemary and Thyme. MAN, it was good. We served it with the Bleu Cheese Souffle from yesterday. This one.
Because lamb is such an amazing, versatile protein, I used the leftovers last night for these sandwiches.
Throw in some sweet potato tots and dinner, is served! How down and dirty, and quick and easy can it get y’all?
Smoked Lamb Sandwiches with Bleu Cheese Fennel Seed Slaw
- 1 wedge good Bleu Cheese, I used Rogue Creamery Smokey Bleu
- 4 slices good bread or hoagie rolls
- 8 oz. smoked lamb
For the slaw:
- 1/2 head of cabbage, chopped
- 1 bunch green onion, chopped
- 1/2 cup Mayo or Miracle Whip
- 1/8 cup sugar
- 1/4 cup apple cider vinegar
- 1 tbsp. whole fennel seed, toasted
- salt & pepper to taste
Directions
For the slaw, mix mayo, sugar, vinegar, salt & pepper. Pour over cabbage and onion. Toss to combine. Set aside.
Toast bread or hoagie roll. Layer crumbled bleu cheese, thinly sliced lamb, and top with Fennel Seed Slaw.
Life’s too short to eat ugly food y’all.
