Chef Cidney Header

Picture this. It’s Valentine’s Day and you really want to wow that special someone. You want to create a very special evening and make a lasting impression. Unfortunately, you have champagne tastes on a beer budget.

What if I told you there was a way to make this happen. What if I told you that your Valentine could be totally “wowed” with what you have in your wallet right now? What if I told you that you could cook a spectacular, gourmet meal for your Valentine for under $50…a couple!

Chef Cidney “Cid-tastic” Wilcox took on the challenge of creating an amazing gourmet Valentine’s meal for two, on not much more than a Burger King budget. You won’t believe what she created for you or what $50 will buy your Valentine!

Eggroll

Oyster ceviche egg roll with a mango mingonette sauce

ShUcked Oysters

  • Garlic
  • Red onion tiny dice
  • Diced tomato
  • Red jalapeño
  • Juiced orange
  • Juiced lime
  • Green onion
  • Egg roll wrapper

Mango-ginger mignonette

  • Red onion
  • Mango diced
  • Garlic
  • Ginger

Put all in food processor except onions. Fold in onions after.

Duck

Braised duck legs/chorizo cassoulet with roasted poblanos, charred corn, beech shrooms, melted leeks, and seared bok choy

  • 2 duck legs
  • Chicken stock
  • 1 onion
  • 3 garlic cloves
  • Thyme
  • RubOn! Garlic herb salt, to taste

Cut excess fat from duck. Pat dry. Season with garlic herb salt. Sear in a seriously hot pan. Put in pressure cooker with chicken stock 1/3 of the way, throw in onion, garlic, and thyme. Close cooker and pressurize for about 30 mins.

Cassoulet

  • 2 Chorizo links seared whole, 1 diced, 1 whole sliced in half
  • Soaked white beans
  • Brown sugar
  • Roasted diced poblanos pepper
  • 1 ear of corn
  • Beech mushrooms
  • 1/2 onion, diced
  • Stock
  • Garlic

In a skillet sauté diced sausage until browned, add onions and saute about 5-8 mins, add garlic, add beans and peppers

Char the corn on an open flame. Cut off and leave aside.

Grilled bok choy

  • Evoo
  • Salt and pepper
  • Bok choy, split long ways in half

Seriously hot skillet and place bok flat side down with some weight on top until browned, flip for about 3 more mins.
