An “Old Fashioned” Ice Cream Sandwich

  • 1 pint Vanilla Ice Cream – homemade or store bought
  • 1/4 cup Four Roses Bourbon
  • 1/2 cup sugar
  • Sugar Cookies – Store Bought or homemade
  • Bourbon Soaked Cherries – Soak cherries in bourbon for a hour or longer
  • Orange Wheel Slices

Directions:

For the bourbon burnt sugar syrup:

Cook sugar in a small saucepan over medium heat, without stirring, until it begins to turn golden brown around the edges. Stir to incorporate melted sugar and cook, stirring occasionally, until melted and a deep amber color. Remove from heat and, stirring constantly, gradually add bourbon (caramel will seize). Cook over medium-low heat, stirring, until smooth, about 5 minutes. Transfer to a jar and chill.

Soften ice cream and whip in bourbon burnt sugar syrup. Freeze. Remove from freezer and place scoop of ice cream between two sugar cookies. Serve with orange wheels and bourbon soaked cherries.

BONUS RECIPE!
