Do you remember on Monday I told you I loved you? And I gave you this amazing Cookie Dough Pie recipe? That meant I loved you a whole lot, right?

Well today I love you …more. I love you even more than I loved you on Monday. Even more than I  loved you yesterday. I know that’s a bunch right? And to prove how very, very much that is, today I’m giving you these.

Peanut Butter and Moonshine Jelly Cupcakes.

I know right?!?!? OUTRAGEOUS! See, I told you I really do love you! I must love you to the moon and back to give you chocolate AND booze all in the same recipe!  You will want to eat them all. The whole entire pan. In just one sitting. And not share. With anyone. Ever. Not even the dog. You will love these.

But when you can’t stop with just one pan, please don’t hate me. I love you. Remember?

Peanut Butter and Moonshine Jelly Cupcakes

Ingredients:

  • 1 batch yellow cake mix – homemade or boxed
  • 3 dozen mini peanut butter cups
  • 3 tbsp. moonshine
  • 1 jar Moonshine Jelly – You can substitute with your favorite jelly if preferred
  • 2 cups of your favorite chocolate frosting

Directions:

Prepare yellow cake mix, adding the moonshine to the batter. Place cupcake liners in pan. Spray with non-stick spray. Fill each cup 1/4 full with batter. I use an ice cream scoop to fill the tins. Place one peanut butter cup in the center of each. Top with 1 tsp. jelly. Add additional batter to cover peanut butter cup and jelly. Bake at 350 for about 35 minutes or until done.
