I am so in the mood.
I’m in the mood for warmer weather, for grilling, for nights in Margaritaville on our back deck, for lighter spring foods, and for chilled white wine.
Wait. What?? WHITE wine? Nope, that wasn’t a typo. Me, the lover of all things Cabernet and Georgia’s utmost red wine aficionado, is ready …for white wine. It is not blasphemy! There are some excellent white wines and I am so ready for that crisp, light taste. I am in just the right mood.
I am also in the mood for this chicken. There is really nothing better than a good, light chicken dish anytime of the year, but especially in the spring and summer. It’s fresh, crispy, golden brown and DEEEEVINE! Add some fresh vegetables, and a bottle cup of white wine, and voila! You have an easy, beautiful, light summer meal. Much lighter and more crisp in taste than it’s cousin, Coqauvin Red. Perfect for back decks, patio parties, warm summer breezes and a second bottle of white wine. Why? Because now YOU are in the mood to wear white too. 🙂
Coqauvin White
Ingredients:
- 3 to 4 lbs. chicken
- 1 cup pearl onions
- 2 celery stalks finely diced
- 2 c. mushrooms
- 2 carrots, grated
- 6 to 8 slices bacon
- 6 c. chicken stock
- 1 c. good white wine
- 1/2 cup heavy cream
- 3 cloves garlic
- 2 bay leaves
- Thyme, salt, pepper
- Fresh parsley for garnish
Directions:
Pan fry bacon, reserving the bacon drippings. Sprinkle chicken pieces with thyme, salt, pepper on both sides and brown the chicken in the drippings. Remove chicken and set aside. Next, add all vegetables, including garlic. Saute until crisp tender. Add white wine. Let simmer for about 5-7 minutes or until reduced by half. Add chicken stock and remainder of ingredients. Nestle chicken back in the pan.
Cover and simmer about 1 hour. Serve with mashed potatoes, mashed sweet potatoes, egg noodles or gnocchi.
For a very low carb option, serve over cauliflower rice or “mock” potatoes. You won’t miss a thing!
