As a modern professional with a very busy schedule, I am always on the lookout for easy and delicious products to use in the kitchen. I’ve really enjoyed using Fortune Yakisoba Noodles for for quick meals on a tight schedule. The refrigerated noodles makes stir-frys and cold noodle salads a cinch after a busy day.

As a seafood lover, this is one of my favorite go-to cold noodle salads. It incorporates briny mussels with sweet mango, charred baby Bok Choy and tasty Soy & Ginger Fortune Yakisoba Noodles for a great meal in record time!

The Recipe: Chilled Coastal Noodle Salad with Charred Bok Choy

Ingredients

• 1 dozen steamed mussels, chilled
• 1 package Fortune Yakisoba Noodles, Soy Ginger Flavored
• 1 fresh mango, peeled & diced
• 1 head of baby Bok Choy, lightly grilled & edges charred
• 2 tbsp. diced green onion
• 1 red pepper, diced
• 2 tbsp. sweet yellow onion, diced
• 1/2 tsp. sliced pickled ginger
• soy sauce & grilled bread optional*

Directions

Prepare Yakisoba Noodles according to package directions. Toss with mango, green onion, red pepper, bok choy, ginger and sweet onion. Chill for at least an hour, then serve topped with mussels and grilled bread if desired.
